Il ouvre son premier restaurant \u00e0 Saint-\u00c9tienne. C&rsquo;est dans ce lieu qu&rsquo;il a pour la premi\u00e8re fois obtenu trois \u00e9toiles au guide Michelin en 1993. <\/span><\/h4>\n<h5 style=\"text-align: justify;\">Suite \u00e0 des difficult\u00e9s financi\u00e8res, il ferma son restaurant de Saint-\u00c9tienne en 1995 pour venir s&rsquo;installer \u00e0 Paris, rue Balzac, o\u00f9 il retrouva ses trois \u00e9toiles quelque temps plus tard.
